Serves 10 people
To make the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Citrus Syrup: Place the listed items into a saucepan, bring to a simmer, mixing to dissolve. Then, remove from the burner allowing it to cool completely. Decant into an sealable bottle, close it and store in the fridge, where it will keep for about four weeks.
For the Batch Mix: Pour the specified spirits and syrup in a large bottle, leave to sit for 60 minutes, then strain preferably using a fine cloth, so it's completely strained.
For serving: Add 85ml of the batch mix to a cocktail shaker packed with ice, and agitate carefully for about 60 seconds to chill. Filter into an chilled martini glass or equivalent, decorate with some cranberries and finish by giving it a brief mist with the mandarin essence over the top.
